Kheema Fry
INGREDIENTS
1.
Ground meat
- Kheema (lamb, goat or turkey) – 1 pack
( 2.5 lbs)
2.
Onions - 2
medium
3.
Tomato – 1 medium
(grind to paste)
4.
Green
Chilies - 4
5.
Curry Leaves
- Handful
6.
Garam Masala
- 2 Tbsps.
7.
Coriander
powder - 1 Tbsps.
8.
Chilie
powder - 1 Tbsps.
9.
Coriander
leaves – handful
10.
Turmeric
powder - 1 Tsp
11.
Salt - 2 tsp
12.
Cloves – 3
13.
Cinnamon
stick - 1 stick
14.
Cardamom – 5
15.
Ginger
garlic paste - 2 tsp

Cashews - 10
METHOD
1.
In a medium,
steel pan, heat the vegetable oil. Add the cumin, cinnamon, cloves and cardamom
and cook over low heat until fragrant, about 1 minute.

Add cut
green chilies and curry leaves.
3.
Add the
chopped onion, salt and cook over high heat, stirring occasionally, until the
mixture is golden brown, about 6 minutes.

Now add the
ginger garlic paste and sauté.
5.
Add the
turmeric and tomato paste and simmer over moderately high heat, stirring occasionally,
until slightly thickened, about 3 minutes.
6.
Now add the
ground meat, Garam Masala, Coriander powder and let it cook for 10 mins.
7.
Fry it
for 15-20 mins stirring it.
8.
Add cashews
at the end if you would like.
