Andhra Style Veg Pulao







INGREDIENTS

1.       Long grained rice (basmati) – 2 cup
2.       1 onion , sliced
3.       Cloves – 3
4.       Stick cinnamon  - 1 big one
5.       Cardamoms – 3
6.       Star Anise - 1
7.       Green peas – 1/4 cup
8.       Carrots – 2 whole carrot sliced
9.       Coconut milk – 1 Cup
10.    Ginger Garlic paste – 1 tsp.
11.    Ghee or Butter – 1 tbsp.
12.    Oil - 1 tsp
13.   Paneer - Nanak , One small packet
14.   Mint Leaves -One bunch
15.   Cilantro -One bunch
16.   Garam Masala - 2 tsps
17.   Chilies - 3
18.  Javitri (Mace)-3 strands

METHOD

1.      Wash the rice and keep aside.
2.      Heat the Ghee and oil in a pan, add the onion, cloves, star anise, cinnamon, Javitri and cardamoms and fry   till the onion becomes translucent.
3.      Add ginger garlic paste and fry for 2 minutes. 
4.      Add Paneer  and saute till slightly brown. Then add green chilies, green peas, Carrot and any other vegetables you want fry for some time. Add mint, cilantro and Garam Masala. 
5.      In a rice cooker add the rice, coconut milk, three and half cups of water and the veggie mixture from  the pan. Add Salt.
6.      Turn the rice cooker on and let it cook regularly.

Few Tips: 
In a pressure cooker do the same and cook it for 2-3 whistles.
Stove top do the same on medium flame.
You can add any other veggies you want as well.
Kids really love this!! For my little one I get mixed veggies bags from whole foods with Lima beans and add a cup of the vegetables. 
You could add chillies if you want to make it spicy. 3 chillies should be good.
