Dhabha Style Egg Curry



INGREDIENTS

1. 4 eggs
2. 1 onion large
3. 1 tomato large
4. 2 tsp ginger garlic paste
5. 2 cloves
6. 1/2″ cinnamon stick
7. 2 pods elaichi (cardamom)
8. 1 star anise
9. ¼ tsp mustard seeds
10.¼ tsp jeera seeds
11. 2 tsp Garam Masala
12. 3 green chilies
13.Curry leaves


METHOD

1. Boil eggs .
2. Heat Oil. Add onion and let it semi cook, add ginger garlic paste and fry for a little bit.
3. Add tomatoes and sauté.
4. Blend the onion and tomato mixture in a blender into a fine paste.
5. Heat a little oil, add all the spices, mustard, jeera, curry leaves and chilies.
6. Let the mustard     seeds splutter.
7. To this add the onion tomato paste and let it simmer for 10 minutes, add some water if needed.
8. To this add coriander powder, turmeric powder, chili powder and Salt to taste
9. Add Garam Masala stir for a few a minute.
10. Half slit the boiled eggs vertically. In a separate pan just add a teaspoon of oil and let the eggs get a sear.
11. Add the seared boiled eggs to the gravy and stir it slowly.
12. Let it simmer for 5 minutes.
13. Garnish with chopped coriander leaves.

14. Serve with Chapatis or Rice.
