Andhra style Okra fry (bendakaya vepudu)
INGREDIENTS
1.
Tender Okra - 20
2.
Besan /Chickpea Flour - 6 tbsp
3.
Rice Flour - 2 tbsp
4.
Turmeric - a pinch
5.
Red Chili Powder - 1/4 tsp
6.
Baking Soda - a pinch
7.
Salt
8.
Water
9.
Oil for deep frying
THADKA
1.
1 small onion, cut lengthwise
2.
2 garlic cloves chopped
3.
2 green chilies
4.
1 tsp each of mustard seeds, cumin seeds, urad dal, channa dal
5.
2 tsp red chili powder
6.
1 tsp Coriander powder
7.
Pinch of turmeric powder
8.
1 stalk of curry leaves
9.
Salt to taste
10.
2 tbsps oil
11.
10 roasted cashews (broken)
METHOD
1.
Cut okra lengthwise into 4 strips.

Make a thick batter by mixing chickpea flour, rice flour, salt, baking soda,
turmeric and red chili powder.

Heat oil over medium high in a wok .Mix the Okra in the batter .Fry the okras
in batches till crispy and golden brown. Keep them aside.

Heat oil in a wide skillet. Add the mustard seeds, let them splutter, add the
cumin seeds, urad dal, chilies, channa dal, curry leaves, garlic turmeric
powder and let them brown.
5.
Add the chopped onions and sauté till transparent.
6.
Add cashews and stir them for a minute.
7.
Now add the fried Okra and sauté it for a few minutes.
8.
Add chili powder, coriander powder and salt, sauté for a minute.
9.
Serve hot with steamed rice.
