Capsicum and Paneer (Kadai paneer)





Ingredients

1.       Paneer ( Cottage Cheese) 500 grams
2.      One Green Capsicum, One red Capsicum
3.      Ginger garlic paste 1 tea spoon
4.      Coriander seed powder 1 teaspoon
5.      4 red chilies
6.      1 tsp. kastoori (dried fenugreek leaves) methi
7.      2 chopped green chilies
8.      1 onion
9.      2 chopped tomatoes
10.   1/2 bunch coriander chopped
11.    4 Table spoons oil
12.   Spices ( cloves, cinnamon, elachi, bay leaf)

Method

1.       Dice the paneer in small cubes.
2.      Slice capsicum in thin strips.
3.      Heat the oil in a pan.
4.      Add the cubes of paneer and let them sear till they are lightly brown, take them out.
5.      Add some more oil in the pan and Fry the capsicum pieces let them sear well. If you let them burn a little you will get a good Smokey flavor to your dish. Remove them from the pan and keep aside.
6.      In the same pan add the spices. Add the onions and let them cook down till they are brown. Add the ginger garlic paste and green chilies and let it cook well.
7.       Add the chilly powder and then the coriander powder.
8.      Add the diced tomatoes and cook until the oil starts separating from the mixture. This is an indication that the mixture has been cooked well.
9.      Add salt to taste.
10.   Take the dried kasoori methi and add it by when you crushing it in your palms. This releases more fragrance.
11.    To the above mixture add the capsicum and paneer and cook for a few minutes
